Global gourmands, prepare yourselves: the 2024 culinary calendar may have just reached its apogee. On August 1 and 2, chef Daniel Humm of Eleven Madison Park will be collaborating with SingleThread, Sonoma’s only three-Michelin-starred restaurant, in a two-night plant-based extravaganza.
For the uninitiated, both SingleThread and Eleven Madison Park are considered among the finest restaurants in the world. In 2017, Eleven Madison Park came top of the World’s 50 Best Restaurants, while SingleThread has been climbing the rankings and is currently the only Californian restaurant to make the top 50.
This two-night Chef Collaboration Series will see Daniel Humm and his team touchdown in Healdsburg to celebrate the abundance of summer produce available from SingleThread Farm and the local area. As a true master of plant-forward cooking — the menu at Eleven Madison Park has been entirely vegan since 2021 — Humm is set to bring his meatless wizardry to the West Coast.
“We’re eager not only to collaborate with and support chef Daniel Humm and Eleven Madison Park’s fully plant-based tasting menu and ethos, but also to celebrate the ingredients that arrive in abundance on the farm at this time of year with two truly special dinners,” said SingleThread owner-chef Kyle Connaughton. “We look forward to introducing chef Daniel and his team to our farmers and the bounty of ingredients Sonoma County offers, all while exchanging ideas and techniques from their home and inspiring approach to fine dining in New York.”
As restaurant collaborations go, this is one for the ages. SingleThread and Eleven Madison Park both sit within the elite club of only 13 restaurants in the United States to hold three Michelin stars. In retaining its three Michelin stars since its industry-shaking move to a fully plant-based menu, Eleven Madison Park became the first three-star vegan restaurant in history.
SingleThread, as well as its three stars, holds a Green Michelin star, as well as three snails from the Slow Food Movement, highlighting the restaurant's commitment to sustainable practices. By collaborating with both SingleThread and SingleThread Farm, chef Humm will be able to incorporate what he has learned from cooking entirely plant-based at the highest level, with the incredible produce grown on the farm and surrounding area.

Taking the lead when it comes to farming, Katina Connaughton is the owner, head farmer and floral designer at SingleThread and SingleThread Farm. A driving force in sustainability, she has pursued the implementation of regenerative agricultural practices and led the farm in increasing biodiversity.
“I look forward to welcoming the team from Eleven Madison Park to Healdsburg and SingleThread to explore our farm which is so vibrant this time of year,” she said. “I hope the farm sparks creativity for chef Humm and his team and can’t wait to see how they showcase the bounty of the season in their dishes in collaboration with our SingleThread culinary team.”
